Do deer enjoy eating a variety of vegetation, including bushes and young trees. However, specifically considering olive trees, experiences may vary depending on the geographical location. Generally, olive trees are fairly resistant to wildlife damage due to their dense foliage and bitter-tasting leaves. Therefore, while it is not impossible that a deer will eat an olive tree, especially if food options are limited or during harsh winters where food becomes scarce, they wouldn't typically be their first choice of food source. Deer would instead prefer other plants with tender foliage or bark before targeting an olive tree.
